Is it possible to install the Performance Image with Linux Kernal updates enabled, as is available in the Secure Image?

Hey @ThePfhor , there are two ways you can handle this:

1. Run "winesapOS Upgrade" on the desktop. This handles kernel upgrades (even on the performance and minimal images).
2. Edit the /etc/pacman.conf file and remove the entries from the IgnorePkg line.

Also, your second answer means, I can install the Secure package, and just modify that file, before I install it, to ignore the features I do not want?

Yes, that is correct. The secure image only ignores a few problematic packages. You can add other packages to IgnorePkg if you want.
