Eve Thermostat does not send updated temperature to HA

The problem

I have an Eve Thermo(stat) which has the Matter Beta Firmware installed.
It is connected to HomeKit and then a new Pairing code was generated to pair it to Home Assistant via the Matter Integration.

Problem is the following:

• Thermostat is on, 22°

• I manually turn off the thermostat (on the device)

• A while later I turn the thermostat back on (on the device) and at the same time change the temperature to 17° (on the device)

• --> In HomeKit it is shown correctly as on and 17°

• --> In Home Assistant it shows as on with 22°. The log only says "Changed to Heat"

It happened to me twice, I will check if it happens every time. I can provide logs if required, but I don't know which ones are needed.

The issue persists after the Matter Server 6.0.0 update. Can confirm it happens each time

Some issue with 6.0.0 and an EVE motion device. Seems like it is frozen for HA

This smells like some other issue is going on and this is just a side effect.
We have lots of users (and our test setups as well) running both Eve Thermo and Eve Motion devices without any issues.

I'd suggest joining the discord server to discuss this to get some (community) help and troubleshooting steps.
In any way, its very much likely not a bug.
