Im aware this hasn't been updated in a while, but possibly might be worth adding RS232 logging too.

I'd love to see some pull requests for logging other protocols. RS232 would require some hardware mods on the ESPKey due to the higher voltages for that standard. 5V UART could be logged without hardware modification. I've done a little bit of tinkering with logging I2C and UART using the ESPKey but haven't come up with a user interface, so nothing worth sharing.
